Recipe: Ricotta Cookies
Ricotta Cookies are one of our all time favorites! They are so easy to make and everyone will love them! They have a light lemon flavor and using a whey-based ricotta (firmer and more custard-like than milk-based ricotta) holds them together while retaining moisture. Fun language fact: in Italy, ALL cookies are called "biscotti" - it is the actual Italian word for cookie! So please enjoy these Biscotti alla Ricotta!
Ingredients

2 c. sugar

zest of one lemon

3 Tbsp. lemon juice

½ c. butter

2 eggs
-
2 ½ c. all-purpose flour

1 tsp. baking powder

1 tsp. salt

Optional: For glaze: ¾ c powdered sugar + 3 T Limoncello
Directions:

Preheat oven to 350°F.

In a large bowl, beat butter, sugar, eggs & lemon zest together until light yellow and creamy.

Fold in ricotta and lemon juice.

Add flour, baking powder, and salt all at once to the bowl. Mix until smooth.

Drop tablespoon-sized balls, spaced 3” apart, onto a sheet pan.

Bake for 12 minutes.

Optional: mix powdered sugar and limoncello until smooth, then brush or spoon the mix onto the cookies as a delicious glaze!
